Cajá is known by species name Spondias mombin. The fruit grows on a tree which also produces flowers and reaches a maximum height of 20 meters. Originating from the tropical Americas, the fruit is yellow/orange and has a single large seed in the centre. There is no industrial cultivation of cajá trees, however, all fruit harvested is wild. The tree grows its first fruit after 3 years and continues to produce fruits for approximately 25 years.

Sensory Profile

Cajá Puree has a light yellow / light orange color. It has a sweet-sour flavor with notes of tropical juice. It blends well with other flavors like mango, papaya of pineapple.
