Umbu which goes by the species name Spondias tuberosa, is a small wild tree native to North-Eastern Brazil. The indigenous name means ‘tree that gives drink’. The tree produces round fruit, which are compact in diameter and yellow or green in colour. Umbu can hold water over several months and produces fruit once a year for a very short time span. Growing only on wild trees, the first umbu are produced after approximately 5 years. The tree then continues to bear fruit for up to 25 years.

Umbu Puree has a yellow / greenish color. It has a sour flavor which is rather distinct and unique. It slightly reminds of gooseberry or plums. Blended with other flavors is adds a pinch of sourness and an exotic profile.
